With a focus on lunch and catering to Square Victoria’s demographic of professionals, Tbsp. will serve daily-changing two-course lunch table d’hotes, with a la carte options also available. The concept is to serve thoughtful, locally sourced, seasonal fare in a refined yet relaxed atmosphere, without pretension and on a timeframe that would have patrons able to enjoy their meal on a regular lunch hour.
Chef Joris Larigaldie will be at the helm - classically French-trained, Tbsp. will apply the refined techniques he’s known for to a “nouveau” Italian menu. Dishes like pillowy homemade gnocchi with Quebec-farmed duck confit over velvety squash purée or a bright and creamy pappardelle with broccoli, spinach and crispy garlic croutons are just two glimpses into the a la carte offerings.
